Scottish Smoked Salmon is still the most popular world wide. Ardtaraig source their salmon from the northern isles of the cold clear waters of Scotland and only carefully selected fish are used. A mixture of sea salt and demerara sugar is applied to cure the fillets prior to smoking.The soft pellicle remains on the product to give it a more characteristic smokey flavour. Smoked over smouldering oak and beech wood chippings in a temperature and humidity controlled kiln for 7 – 9 hours.
